preheat oven to 350 F. (that's 175-180 C, I think)
combine all dry ingredients:
2 c whole wheat flour
1 tsp baking soda
1 c oatmeal
1/2 c Post grape-nuts cereal
1/4 c dark brown sugar
2 Tbs white sugar
dash salt (1/4 tsp?)
1/2 tsp cardamom
1/4 tsp nutmeg
1/4 tsp mace
1/3 c golden raisins
1/3 c walnut pieces
add liquid ingredients:
3 eggs, beaten
1 c apple juice
1 Tbs vanilla
Mix thoroughly. Can be made as drop cookies (teaspon size glops of dough) or as bar cookies (10x15 cookie sheet with 3/4 inch lip). Prepare cookie sheet surfaces with Pam no-stick cooking spray or oil lightly with a light oil. For bar cookies, you may want to add about 1/4 c additional apple juice to make batter more spreadable; spread batter to uniform thickness with spatula. Bake for about 10 minutes or until golden brown. Let bar form cool slightly before cutting. These are relatively moist when done.
Original recipe was a classical cardboard inedible Òhealthy-food/good-for-youÓ; I've polluted it with eggs & sugar, basically (changes from original recipe: 3 whole eggs was 6 egg whites; cinnamon out, mace in; sugars, salt, raisins, nuts in). Spices and sugars can probably be adjusted even further to taste of your family; compensate with additional apple juice if needed.
